- 2 lb. fish meat, chopped
- 1 medium onion, sliced
- 2 large potatoes, sliced
- 2 large tomatoes, sliced
- 1/4 c. olive oil
- 2 garlic cloves, minced
- 2 bay leaves
- 1/4 c. finely chopped parsley
Directions

1Over medium heat, cook potatoes, onion, garlic and bay leaves in a saucepan for 5 minutes until onions are translucent.

2Add remaining ingredients, except fish.

3Boil until vegetables are tender.

4Add fish and heat until cooked through.

5Add salt and pepper to taste.
