Ingredients

  • 1 large onion, chopped
  • 1/2 c. celery, chopped with leaves
  • 1 large garlic clove
  • 2 Tbsp. butter
  • 2 (1 lb.) cans chopped tomatoes
  • 1/2 c. dry white wine
  • 1/2 c. minced parsley
  • 1 tsp. salt
  • 1/4 tsp. rosemary
  • 1/4 tsp. pepper and thyme
  • 1 lb. fish (any whitefish, cod is very good)

Directions

    Saute onion, celery and garlic in butter. Add all other ingredients, except fish, and simmer for 30 minutes.

    Add fish in chunks and cook gently for 7 to 10 minutes.
