- 1 1/2 lb. skinless fish fillets
- about 1/2 c. flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 6 strips bacon
- 2 Tbsp. chopped onion
- 1 1/2 c. tomato juice
- 1 tsp. prepared mustard
- 1/2 tsp. parsley flakes
- 1/4 tsp. garlic powder
- 1/2 c. sour cream
Directions

1Cut fish in bite-size pieces.

2Mix flour, salt and pepper. Coat each piece.

3In large frying pan, cook bacon until crisp. Remove bacon from pan and reserve.

4Cook onion and fish in bacon fat over medium heat until lightly browned.

5Reduce heat and mix in tomato juice, mustard, parsley and garlic powder.

6Simmer until sauce thickens slightly, 5 to 10 minutes.

7Remove from heat and stir in sour cream.

8Serve over hot cooked rice or toast points. Crumble bacon and put on top of each serving.
