Ingredients

  • 1 1/4 cup buttermilk
  • 1/4 cup margarine, melted
  • 2 eggs
  • 1 cup brown sugar
  • 1 cup wheat and barley cereal nuggets
  • 1/2 cup rolled oats
  • 1/4 cup cornmeal
  • 1 1/2 cup whole wheat flour, (or all-purpose)
  • 2 tsp. baking soda
  • 1/2 (125) raisins

    HEAT oven to 350F (180C).

    IN a large bowl, combine buttermilk, margarine and eggs.

    Add sugar, cereal, oats and cornmeal; let stand 10 minutes.

    MEANWHILE, mix flour, soda and raisins.

    ADD dry ingredients to wet ingredients, stirring only until just moistened.

    SPOON into greased muffin cups.

    BAKE for 20 to 25 minutes, until golden brown.
