  • 2 oz. buttery crackers, made into crumbs
  • 1/4 tsp. each: basil leaves and oregano leaves
  • 1/4 c. plain low-fat yogurt
  • 1 tsp. grated Parmesan cheese
  • 2 thin chicken cutlets (4 oz. each)
  • 2 tsp. vegetable oil

Directions

    Preheat oven to 425°.

    Combine cracker crumbs, cheese, basil and oregano.

    Dip 1 cutlet into yogurt and then into crumb mixture, coating both sides evenly.

    Repeat with other cutlet.
