- 1 12 cups sugar
- 6 eggs
- 1 (15 ounce) can sweetened condensed milk
- 2 (12 ounce) cans evaporated milk
- 1 teaspoon vanilla extract
Directions

1Pre-heat oven to 325F.

2Pour 1 cup sugar in warm pan over medium heat.

3Stir constantly until sugar becomes brown and completely melted.

4Pour into 12 ramekins and tilt to swirl caramel around sides.

5In large bowl, beat eggs.

6Slowly mix in sweetened condensed and evaporated milk.

7Slowly mix in 1/2 cup sugar and vanilla.

8Blend until smooth.

9Pour equally into ramekins.

10Set ramekins in large baking dishes and fill dishes with water half-way up the sides of the ramekins.

11Bake 45 minutes.

12Test to make sure flan is set by inserting knife half-way between edge and center.

13Knife should come out clean.

14Remove from oven and cool on rack.

15Refrigerate at least one hour.

16Before serving, place dishes in hot water for 30-60 seconds.

17Run spatula or knife around side and invert onto plate.
