1Prepare the custard as shown here and keep cool.

2Beat the egg whites until stiff with a pinch salt gradually adding 30 grams of sugar until mixture whitens.

3Make balls using a tablespoon on a plate (proceed several times if necessary) and cook in the microwave oven for 30 seconds.

4Place the custard in individual cups topped with a white ball. Keep cool.

5At serving time, prepare caramel (if it is done too early, it will soften) with 100 grams of sugar and just a little bit of water. When golden, pour on the floating islands. To make original decorations, using a tablespoon, pour the caramel in geometric shapes. Once the forms are completely cooled, gently peel them off the paper and place them in the egg whites.
