Ingredients

  • 1 lb Ground Chicken
  • 1 bell pepper
  • 1 onion
  • 1 lemon
  • 1 tbsp ground cumin
  • 1/2 tbsp corriander
  • 1 tbsp paprika
  • 1 dash cayenne pepper
  • 1 package of 8 Mission Brand Carb Control Tortillas
  • 1 28 ounce can Green Enchilada Sauce
  • 1/2 cup 2% Chedder Cheese

Directions

    In a skillet brown your chicken and green pepper and onion together

    When meat is cooked, add in spices and a little bit of the enchilada sauce to moisten and bring it all together.

    Scoop into the tortillas and roll to close.

    Lay in a pan, seam side down

    Pour the remaining sauce on top, then add cheese

    I topped mine with Jalepenos then put into a 350F oven until it was hot and bubbily.

    I loaded mine down with avocado, cilantro, and non fat greek yogurt.
