3 Tablespoons flour 1/4 teaspoon nutmeg

Prick pie crust, bake at 425° for 5 minutes. Cool slightly. Mix cream, flour, eggs, spice together. Layer spinach and cheese in crust; pour in cream mixture and bake at 350° for 1 hour. Let stand a few minutes and serve. It's great hot, cold, or room temperature. If you want you can add some crumbled bacon. (Mrs. Smith and Pet Ritz make an excellent ready-made pie crust.)
