  • 2 eggs
  • 1 (16 oz.) can fruit cocktail and juice
  • 1 c. coconut
  • 1/2 c. firmly packed brown sugar

Directions

    Blend first 4 ingredients, then mix at medium speed for 2 minutes.

    Place in 9 x 13-inch pan and sprinkle with brown sugar. Bake at 325° for 45 minutes or until cake springs back when touched lightly in center.

    Remove from oven and put icing on immediately while warm.
