Flounder Roll-Ups

Ingredients
- 6 fillets of flounder
- 1/2 c. scallops, shrimp or lobster meat, chopped fine
- 1/3 c. vegetable oil
- 1 Tbsp. minced onion
- 1/2 Tbsp. minced parsley
- 2 garlic cloves, minced
- grated Parmesan cheese
- juice of one lemon
- 20 Ritz crackers, crushed
- 3 Tbsp. melted butter
Directions

1Preheat oven to 350°.

2In medium-sized frying pan, saute scallops, onion, parsley and garlic in oil for 1 minute, stirring constantly.

3Remove from heat and mix in cracker crumbs. Divide dressing equally, spreading evenly over fillets.

4Sprinkle with grated cheese and few drops of lemon juice.

5Roll each fillet, jelly roll fashion, and secure with toothpicks.

6Brush each with melted butter.

7Place on cookie sheet, cover lightly with foil and bake for 10 minutes.

8Remove foil and cook 10 minutes more, or until fish flakes easily when touched with fork.

9Serve immediately.
