  • 2 tbsp butter
  • 4 oz ham, cut into strips
  • 3/4 cup roasted red pepper, sliced
  • 2 cups baby spinach leaves
  • 6 None eggs, separated
  • 1/2 cup heavy cream
  • 3/4 cup grated Gruyere cheese
  • 1 tsp Dijon mustard
  • None None Crusty bread, to serve

Directions

    Preheat the oven to 350°F. Lightly grease 4 gratin dishes or 1 shallow gratin dish. Place on a baking pan.

    Melt butter in a large skillet on medium heat. Saute ham, pepper and spinach for 1-2 mins until spinach wilts. Spoon evenly into ramekins.

    Whisk egg yolks, cream, 1/2 cup of the cheese and Dijon mustard in a large bowl. Season to taste.

    In a separate clean bowl, whisk egg whites until soft peaks form. Fold into egg yolk mixture. Pour evenly into dishes. Sprinkle with remaining 1/4 cup cheese.

    Bake for 10-12 mins until risen and golden. Serve with crusty bread.
