- 2 14 cups dry penne pasta
- 450 g plum tomatoes
- 275 g mozzarella cheese
- 4 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- grated lemon rind
- 1 tablespoon lemon juice
- 15 fresh basil leaves, shredded
- salt & freshly ground black pepper
- fresh basil leaf, to garnish
Directions

1Cook the pasta with some salt and olive oil.

2Quarter Tomatoes and cheese into small cubes.

3Mix olive oil, vinegar, grated lemon, 1 tbsp of lemon juice, and the shredded basil leaves.

4Add to the above salt, pepper, and the tomatoes and cheese.

5Drain the pasta well, and pour over the above mixture.

6Mix well and garnish with basil leaves.

7You can add Mediterranean black olives to the plate, It will only make the taste even better!
