- 1 envelope unflavored gelatin
- 1/4 c. cold water
- 3 Tbsp. boiling water
- 3 egg whites
- 1/8 tsp. salt
- 6 Tbsp. sugar
- 1/2 tsp. vanilla extract
- 1 c. whipping cream, whipped
- 2/3 c. canned moist-type flaked coconut
- Mandarin oranges (for garnish)
Directions

1Soften gelatin in cold water.

2Add boiling water and stir until dissolved.

3Cool to room temperature.

4Beat egg whites with salt until frothy.

5Add sugar, 1 tablespoon at a time, and beat well after each addition.

6Continue beating until mixture holds a peak when beater is lifted.

7Slowly beat gelatin.

8Add vanilla to whipped cream.

9Mix and fold into egg whites.

10Fold in coconut. Cover and chill at least 4 hours.

11Garnish with Mandarin oranges and serve.
