  • 1-1/4 cup Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 2 teaspoons Sugar
  • 1 teaspoon White Vinegar
  • 1 cup Milk
  • 2 Eggs, Separated
  • 2 Tablespoons Oil
  • 1 teaspoon Vanilla

Directions

    Mix the flour, baking powder, baking soda, and sugar in a large bowl; set aside. Add the vinegar to the milk. Separate the eggs and mix the egg yolks with the milk, oil, vanilla; mix well. Then add the milk mixture to the flour.

    Beat the egg whites till they almost forms peaks. Gently fold the egg whites into the batter.

    Heat griddle and spray or wipe with oil. Scoop about 1/3 cup of batter onto griddle. Turn when bubbles fill the top.

    Cinnamon (1-2 teaspoons) can be add to the batter.

    Pancakes can be frozen. When pancakes are cooled, layer them with wax paper between them. Put in a freezer bag.
