- 3 lb. potatoes (6 large)
- 1/4 c. finely chopped onion
- 1/4 c. margarine
- 1 (12 oz.) carton small curd cottage cheese (1 1/2 c.)
- 1/4 c. snipped parsley
- 1 tsp. salt
- margarine, melted (optional)
Directions

1Cook, peel and mash the potatoes.

2In a saucepan, cook onion in 1/4 cup margarine until tender, but not brown.

3Stir onion, cottage cheese, parsley and salt into mashed potatoes.

4Spoon potato mixture into a well-greased 2-quart casserole.

5Drizzle melted margarine over top, if desired.

6Bake at 350° until mixture is heated through and browned, about 30 minutes.

7Garnish the potato casserole with additional snipped parsley, if desired.
