  • 3 lb. potatoes (6 large)
  • 1/4 c. finely chopped onion
  • 1/4 c. margarine
  • 1 (12 oz.) carton small curd cottage cheese (1 1/2 c.)
  • 1/4 c. snipped parsley
  • 1 tsp. salt
  • margarine, melted (optional)

Directions

    Cook, peel and mash the potatoes.

    In a saucepan, cook onion in 1/4 cup margarine until tender, but not brown.

    Stir onion, cottage cheese, parsley and salt into mashed potatoes.

    Spoon potato mixture into a well-greased 2-quart casserole.

    Drizzle melted margarine over top, if desired.

    Bake at 350° until mixture is heated through and browned, about 30 minutes.

    Garnish the potato casserole with additional snipped parsley, if desired.
