- 1/2 pt. mint ice cream
- 12 to 16 large chocolate cookies
Directions

1Empty ice cream into a bowl.

2With a spoon, stir ice cream until it softens just a little.

3With a butter knife, spread softened ice cream on a cookie.

4Cover it quickly with another cookie.

5Wrap the ice cream sandwich in a square of aluminum foil, and pop into freezer.

6Use the rest of ice cream and cookies to make more sandwiches working quickly so ice cream won't melt. Freeze for 24 hours.
