  • 3 carrots
  • 1 small onion
  • 4 chicken breasts or thighs
  • salt and pepper
  • 3 stalks celery
  • 2 medium potatoes
  • butter

Directions

    Cut carrots, celery, onion and potatoes into bite size pieces. Place one piece of chicken and 1/4 vegetables on each of four pieces

    of foil. Add a pat of butter and salt and pepper.

    Bring foil up over chicken and fold edges tightly. Bake at 350° for 1 hour or until chicken and vegetables are tender.
