Foil Roasted Chicken

  • 1 chicken, cut up
  • 1 green pepper, cut into rings
  • 2 onions, quartered
  • 4 potatoes, quartered
  • 4 carrots, quartered
  • 2 celery stalks, cut in pieces
  • 1 (14 1/2 oz.) can diced tomatoes
  • salt and pepper to taste
  • 1 Tbsp. melted margarine
  • paprika

Directions

    Line a roasting pan with a large piece of foil.

    Place vegetables in foil and arrange chicken on top.

    Empty can of tomatoes over all and season with salt and pepper.

    Wrap foil around chicken tightly.

    Roast at 375° for 1 hour.

    Turn back foil and baste chicken with pan juices.

    Brush chicken with margarine and sprinkle with paprika.

    Roast 45 minutes longer, uncovered.
