- 1 teaspoon sugar
- 34 cup water (105 F to 115 F)
- 1 package yeast (1 Tbs)
- 1 carrot, grated (1/2 cup)
- 12 small zucchini, grated (1/2 cup)
- 14 small red onion, grated (1/4 cup)
- 14 red bell pepper, grated (1/4 cup)
- 3 14 cups flour
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon sugar, additional
- 12 teaspoon dried thyme
- 12 teaspoon dried basil
Directions

1In a measuring cup, dissolve 1 tsp.

2sugar in warm water.

3Sprinkle yeast over and let stand for 8 to 10 minutes, until foamy.

4Stir to dissolve.

5Grater: Grate vegetables, using medium pressure.

6Transfer to measuring cup.

7You need about 1 1/2 cups of vegetables.

8Steel Blade: Place flour, oil, salt, remaining 1 tsp.

17Place dough in large greased bowl, turning to grease all surfaces.

18Cover bowl with plastic wrap and let rise in warm place until doubled, about 1 1/2 hours.

19Punch down.

20If you have time, let rise a second time; punch down once again.

21To shape: On a lightly floured surface, roll dough into 9 x 12-inch rectangle.

22Roll up like a jelly-roll from the shorter side.

23Seal ends by pressing down with edge of your hand.

24Place seam-side down in sprayed 9 x 5-inch loaf pan.

25Cover and let rise until doubled, about 1 hour.

26Bake in a preheated 425 F oven for 25 to 30 minutes, until golden brown.

27Bread should sound hollow when tapped with your fingertips.
