Foolproof Oven Stew

Ingredients

  • 1 1/2 lb. arm roast, cut in cubes
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 4 carrots, quartered
  • 5 potatoes, cubed
  • 3 tsp. salt
  • 1 1/2 Tbsp. sugar
  • 3 Tbsp. Minute tapioca
  • 1 1/2 c. tomato juice
  • 1 tsp. Kitchen Bouquet
  • 1 pkg. frozen peas

Directions

    Grease bottom and sides of 3-quart casserole.

    Arrange layers of roast, onion, celery, carrots and potatoes in casserole. Combine salt, sugar, tapioca, tomato juice and Kitchen Bouquet in a bowl; mix well.

    Pour over top, do not stir.

    Bake at 250° for 3 1/2 hours.

    Remove from oven.

    Add peas and bake for 30 minutes longer.

    Remove from oven and mix well.

    Cover casserole with foil before baking.
