Ingredients
- 1 1/2 lb. arm roast, cut in cubes
- 1 onion, chopped
- 2 celery stalks, chopped
- 4 carrots, quartered
- 5 potatoes, cubed
- 3 tsp. salt
- 1 1/2 Tbsp. sugar
- 3 Tbsp. Minute tapioca
- 1 1/2 c. tomato juice
- 1 tsp. Kitchen Bouquet
- 1 pkg. frozen peas
Directions

1Grease bottom and sides of 3-quart casserole.

2Arrange layers of roast, onion, celery, carrots and potatoes in casserole. Combine salt, sugar, tapioca, tomato juice and Kitchen Bouquet in a bowl; mix well.

3Pour over top, do not stir.

4Bake at 250° for 3 1/2 hours.

5Remove from oven.

6Add peas and bake for 30 minutes longer.

7Remove from oven and mix well.

8Cover casserole with foil before baking.
