  • 2 oz. ham or lean bacon
  • 1/4 lb. suet
  • rind of 1/2 lemon
  • 1 tsp. minced parsley
  • 1 tsp. minced sweet herbs
  • salt, cayenne pepper and pounded mace to taste
  • 6 oz. bread crumbs
  • 2 eggs

Directions

    Shred the ham or bacon; chop the suet, lemon peel and herbs, taking care that all be finely minced.

    Season with salt, cayenne pepper and mace and blend all thoroughly together with the bread crumbs before wetting.

    Now beat and strain the eggs; work these up with other ingredients, and the forcemeat will be ready.
