Fortune Cookies

Directions

   Write fortunes on strips of paper.

   Mix sugar into egg whites and blend until fluffy.

   Melt butter and let cool until warm.

   Add flour, salt, vanilla and butter to the sugar mixture.

   Beat until the batter is smooth.

   Pour batter from a spoon to form circles on a well-greased cookie sheet.

   Bake at 375° about 8 minutes.

   Lay a message on each cookie; fold in thirds, then bend it gently in the center.

   If cookies get too hard to bend, return to oven for about 1 minute.
