- 1 cup basmati rice (7 ounces)
- 2 teaspoons vegetable oil
- 4 cardamom pods, lightly smashed
- 1 small cinnamon stick
- 2 bay leaves
- 1 1/2 cups water
- Salt
Directions

1In a sieve, rinse the basmati rice under cold running water until the water runs clear, about 2 minutes.

2Drain the rice until dry, shaking the sieve occasionally, about 5 minutes.

3Heat the oil in a medium saucepan until shimmering.

4Add the cardamom, cinnamon stick and bay leaves and cook until fragrant, 30 seconds.

5Add the rice and cook, stirring, until opaque, about 2 minutes.

6Add the water and a generous pinch of salt and bring to a boil.

7Cover and cook over low heat until the water is absorbed and the rice is tender, about 18 minutes.

8Remove from the heat and let stand, covered, for 10 minutes.

9Fluff with a fork, discard the spices and serve.
