- 5 eggs
- 4 egg whites
- 13 c. Parmesan cheese
- 1/2 tsp. salt
- 1/4 tsp. Freshly ground black pepper
- 1 tbsp. olive oil
- 2 c. cooked asparagus
- 1/2 c. baked ham
- 1/2 c. shredded Manchego or Cheddar cheese
Directions

1Make Egg Mixture: In large bowl, whisk together whole eggs, egg whites, Parmesan, salt, and pepper.

2In 10-inch broiler-proof skillet, heat oil over medium heat.

3Add egg mixture.

4Sprinkle on the asparagus and ham.

5Reduce heat to low and cook without stirring, about 15 minutes or until sides are set and center is still slightly wet.

6Meanwhile preheat broiler.

7Sprinkle Manchego cheese evenly over top of frittata.

8Broil in pan 6 inches from heat 2 minutes or until frittata is set and top is golden brown.

9Slice into wedges and serve hot from pan or let cool and serve at room temperature.
