- 2 c. washed navy beans
- 1/2 tsp. soda
- 2 lb. salt pork
- salt to taste
- 1/4 tsp. white pepper
- 1 1/2 c. brown sugar
- 1/2 tsp. ground ginger
Directions

1Soak beans overnight with 1/2 teaspoon soda.

2In morning, drain and cover with fresh water.

3In large heavy kettle, boil until tender with 2 pounds salt pork, cut into walnut sized pieces; add salt and pepper.

4Add brown sugar and ginger.

5Place kettle in oven or transfer to baking dish.

6Bake 4 hours at 300°.

7Add water if necessary.

8Be sure not to burn.

9Beans will have glazy top.
