  • 8 chicken breasts, stewed
  • 2 c. Minute rice
  • 2 c. chicken broth
  • 1 1/2 pt. sour cream
  • 1 can cream of chicken soup
  • 30 crushed Ritz crackers
  • 3 Tbsp. poppy seed
  • 1 stick butter, melted

Directions

    Cover bottom of 9 x 13-inch pan with rice; add broth plus water if needed.

    Layer chicken over rice.

    Mix soup, sour cream and poppy seed.

    Pour over chicken.

    Top with crushed Ritz crackers.

    Pour melted butter over top.

    Bake at 325° for 1 hour.
