  • 1 lb boneless skinless chicken breast
  • 2 tablespoons butter
  • 1 cup mushroom, chopped
  • 14 cup parsley, chopped
  • 12 cup tomatoes, chopped
  • 34 cup whipping cream
  • 3 ounces mozzarella cheese, shredded (Monterey Jack works well too)
  • salt & pepper

Directions

    Lightly flour chicken breast halves.

    Sprinkle with salt & pepper.

    Brown chicken lightly in melted butter.

    Put meat in greased baking dish.

    Top with mushrooms, parsley, tomatoes & cream.

    Bake covered at 350 deg for 45 minutes.

    Uncover.

    Top with cheese & bake until cheese melts- about 10 minutes.
