  • 10 boneless, skinless chicken breasts
  • 2/3 c. flour
  • salt
  • pepper
  • paprika
  • 1/2 c. olive oil
  • 1 onion, chopped fine
  • 1 c. cooking sherry
  • 1/2 c. water
  • 1 1/2 c. sour cream
  • 1/2 c. mayonnaise
  • 2 Tbsp. parsley

Directions

    Shake chicken, flour, salt, pepper and paprika in bag.

    Fry chicken in olive oil until browned well.

    When browned, add onion, cooking sherry and water to chicken and simmer with lid for 1 hour.

    Remove chicken.

    Add sour cream, mayonnaise and parsley to drippings.

    Stir until blended well.

    Heat, but do not boil.

    Pour over chicken.

    Serve.
