  • 1 fryer, cut in pieces
  • 2 eggs, well beaten
  • 1 1/2 tsp. salt
  • 1/2 tsp. red pepper
  • 1 1/2 c. fish fry
  • 2 c. oil

Directions

    Season chicken. Dip in eggs, then roll in fish fry.

    Preheat skillet of oil to 375°.

    Place chicken in skillet and cover.

    Turn chicken often so as to brown evenly.

    Uncover skillet to allow it to become crispy, 45 minutes.
