French Lemon Cake

- 1 lemon
- 1/2 c. granulated sugar
- 1 stick (4 oz.) unsalted butter, cut into 8 pieces
- 2 large eggs
- 1 c. less 2 Tbsp. flour
- 1 tsp. baking powder
- 1/2 c. confectioners sugar
- juice of 1 lemon
Directions

1Preheat oven to 325°.

2Adjust rack to center position.

3Butter and flour round 8-inch cake pan.

4Grate lemon peel and mix with sugar; add butter and beat until smooth.

5Add eggs and beat until well blended.

6Mix baking powder and flour and add to mixture and beat until blended.

7Do not overstir.

8Pour into pan and bake about 25 minutes until toothpick comes out clean.

9Cool slightly in pan.
