- 6 ounces chocolate (semi-sweet) semi-sweet chips
- 1 cup butter softened
- 2 cups powdered sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon mint extract
- 1 x nuts

1Melt chips; cool and set aside.

2Beat butter, using electric mixer.

4Add cooled chocolate, beat 5 minutes.

6Mix in vanilla and peppermint extract.

7Sprinkle nuts on bottom of 24 paper holders in cupcake pan.

8Fill each cupcake holder half full.

9Sprinkle with nuts.

10Freeze for at least 3 hours.
