- 6 oz. semi-sweet chocolate
- 2 oz. sweet butter, cut into small bits (1/2 stick)
- 2 egg yolks
- approximately 1/4 tsp. peppermint extract or 1/4 c. rum
- unsweetened cocoa powder (preferably Dutch process)
- approximately 2 oz. additional semi-sweet chocolate (for coating the finished candies)
Directions

1Break or chop the chocolate into medium size pieces.

2Place it in the top of a small double boiler over hot water on low heat. Cover and let stand until partially melted.

3Uncover and stir until completely melted.

4Remove the top of the double boiler temporarily.

5Add the butter, a few pieces at a time and stir with a small wire whisk after each addition until smooth.
