- 1 1/4 c oil
- 2 c sugar
- 2 large eggs
- 1/2 c pecans
- cinnamon
- 1 tsp vanilla
- 3 c self-rising flour
- 3 c chopped raw apples
Directions

1Peel and dice apples, set aside.

2Put oil in mixing bowl. Add sugar and egg, beat until creamy.

3Add small amount of flour to creamed mixture.

4Beat well after each addition.

5Batter will become very stiff.

6Fold in pecans and apples.

7Spread evenly in bottom of large square pan or tube pan.

8Bake for 1 hour at 325°. Cool 15 minutes removing from the pan.
