- 1 1/2 c. Mazola oil
- 2 c. sugar
- 2 large eggs
- 1 tsp. salt
- 2 tsp. baking powder
- 1 tsp. vanilla
- 2 1/2 c. sifted flour
- 1 c. pecans, chopped
- 3 c. fresh apples, chopped
- 1 tsp. soda
Directions

1Put oil in large mixing bowl.

2Add sugar and eggs.

3Beat until creamy on low speed of mixer.

4Sift flour again with salt, soda and baking powder.

5Add small amount of flour mixture at a time to egg and sugar mixture, beating after each addition.

6Remove from mixer and add apples and nuts by hand.

7Bake in paper-lined 9 x 13-inch pan in 350° oven for 55 to 60 minutes.
