  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 2 c. sugar
  • 1 1/4 c. cooking oil
  • 2 tsp. vanilla
  • 3 eggs, at room temperature
  • 3 c. apples, peeled and diced
  • 2 c. pecans, chopped
  • 1 c. raisins or dates

Directions

    Mix and sift all dry ingredients; add eggs, oil and vanilla, beating constantly.

    Fold in nuts, raisins or dates and chopped apples.

    Bake in greased and floured 9 x 13-inch pan at 350° for 45 minutes to 1 hour.
