Fresh Apple Pound Cake

  • 3 c. all-purpose flour, spooned into cup
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 1/2 c. corn oil
  • 2 c. sugar
  • 3 large eggs
  • 2 tsp. vanilla extract
  • 1 1/4 c. chopped pecans
  • 2 c. pared apples, finely chopped

    Sift together flour, soda and salt.

    Set aside.

    In a large bowl beat oil, sugar, eggs and vanilla at medium speed for 3 or 4 minutes.

    Gradually add flour mixture; beat until smooth.

    Fold in pecans and apples.

    Pour batter into a greased and floured Bundt pan.

    Bake in a preheated 325° oven for 1 hour and 20 minutes or until cake tests done.

    Cool on a wire rack for 20 minutes. Dribble with brown sugar topping while warm.
