Fresh Arugula Salad

  • 1 bag (about 5 To 7 Oz.) Fresh Rucola, Or Any Other Greenery You Have
  • 6 whole Cherry Tomatoes, Cut In Half
  • 2 ounces, weight Feta Cheese
  • 2 dashes Olive Oil
  • 2 Tablespoons Red Wine Vinegar
  • 1 teaspoon Sugar (more To Taste)
  • 1/4 teaspoons Salt
  • Freshly Ground Black Pepper
  • 6 whole Pitted Black Olives (or You Can Substitute Pecans If You Don't Like Olives)
  • 1 whole Lemon, For Squeezing

Directions

    Add fresh rucola and cherry tomatoes to a medium bowl.

    Cut the feta into cute, uneven chunks and toss them onto the array of healthy veggies.

    Combine olive oil, vinegar, sugar, salt, pepper, and pitted black olives in a bowl. Whisk together until combined. Taste and adjust seasonings.

    Pour dressing over salad ingredients. Toss with tongs or clean hands. Just before serving, top with additional feta and squeeze a little lemon juice over the top.
