Fresh Cooked Collard Greens

- handful fresh collard greens
- beef or turkey sausage
- salt, pepper, cumin and hot sauce
- medium onion, minced
- 2 to 3 cloves garlic, minced
- juice of 1 lemon
Directions

1Cut and wash large handful of fresh collard greens.

2In large pot, brown sausage, onion and garlic.

3If turkey sausage is used, add olive oil (or other oil) to coat pan and avoid sticking.

4As ingredients cook on low heat, cut the greens by first cutting out the thick center stem, then cut the leaves in 1 to 2-inch pieces (small).

5Begin adding the cut greens to the cooking sausage mixture.

6Let saute just slightly, then add just enough water to prevent any sticking.

7Greens should simmer until tender, from 30 minutes to 1 hour.

8As they cook, add lemon juice, salt, pepper, small amount of cumin and hot pepper sauce to taste.

9Hot pepper sauce is hot peppers in vinegar, canned.
