Ingredients
- 4 to 5 ears fresh corn
- 2 Tbsp. butter
- 1/4 c. finely diced onion
- 1/4 c. finely diced green pepper
- 1 1/2 Tbsp. cornstarch
- 2 tsp. sugar
- 3/4 tsp. salt
- 1/16 tsp. pepper
- 1 c. milk
- 3 eggs, beaten
Directions

1Cut corn kernels from cobs.

2Measure 2 2/3 cups without packing down.

3In a small skillet saute butter, onion and bell pepper until wilted.

4In a medium bowl sift together cornstarch, sugar, salt, pepper, milk and eggs.

5Mix well, then add the corn and onion mixture.

6Pour in a pan and bake in a 300° oven about 1 hour or until knife inserted into center comes out clean.

7Remove from oven and let stand 10 minutes before cutting and serving.

8Makes 6 servings.
