Fresh Corn Saute

  • 8 ears fresh corn or 2 (10 oz.) pkg. frozen corn
  • 1/2 c. butter or margarine
  • 1 c. onion rings
  • 1/2 c. green pepper rings
  • 1 1/2 tsp. salt or herbal salt substitute
  • 1/4 tsp. dried oregano
  • 1/2 c. sour cream
  • 2 tomatoes, cut into slices or wedges or use sliced cherry tomatoes

    Cut corn from cob.

    Heat butter in large skillet.

    Add corn, onion, green pepper and oregano.

    Cover and cook 6 to 7 minutes until tender.

    Stir and shake occasionally.

    Add salt, sour cream and tomatoes and cook only until tomatoes are hot, not mushy!
