- 8 ears fresh corn or 2 (10 oz.) pkg. frozen corn
- 1/2 c. butter or margarine
- 1 c. onion rings
- 1/2 c. green pepper rings
- 1 1/2 tsp. salt or herbal salt substitute
- 1/4 tsp. dried oregano
- 1/2 c. sour cream
- 2 tomatoes, cut into slices or wedges or use sliced cherry tomatoes
Directions

1Cut corn from cob.

2Heat butter in large skillet.

3Add corn, onion, green pepper and oregano.

4Cover and cook 6 to 7 minutes until tender.

5Stir and shake occasionally.

6Add salt, sour cream and tomatoes and cook only until tomatoes are hot, not mushy!
