Fresh Creamed Corn

Ingredients

  • 10 to 12 ears fresh corn
  • 1/4 to 1/2 lb. streak of lean, sliced
  • salt and pepper to taste
  • 1 c. evaporated milk (more or less as needed)

Directions

    Cut and scrape the corn off cobs.

    Using large frypan or electric skillet, fry streak of lean until crisp.
  3. 3
    Remove from pan. Add corn, salt and pepper to same pan.

    Cook on medium heat for a few minutes, stirring constantly.
  5. 5
    Add milk and continue cooking on low heat until done.
  6. 6
    Continue to stir every few minutes.
  7. 7
    Cooking time is approximately 30 minutes.
