  • 1 cup quinoa
  • 2 cups low-carb apple juice
  • 14 cup walnuts, chopped coarsely
  • 1 cup berries (or any other fruit)
  • cinnamon
  • nutmeg (optional)
  • 1 pinch dried mint

    Rinse and drain the quinoa to wash off the bitter coating.

    Optional: toast the quinoa before cooking by putting it into a frying pan and shaking/stirring it for 10 minutes or so.

    Put the quinoa and juice in a saucepan; bring to a boil.

    Lower the heat, cover the pan, and simmer for up to 15 minutes (until the quinoa is translucent and the juice has been absorbed).
