- 1 cup quinoa
- 2 cups low-carb apple juice
- 14 cup walnuts, chopped coarsely
- 1 cup berries (or any other fruit)
- cinnamon
- nutmeg (optional)
- 1 pinch dried mint

2Rinse and drain the quinoa to wash off the bitter coating.

3Optional: toast the quinoa before cooking by putting it into a frying pan and shaking/stirring it for 10 minutes or so.

5Put the quinoa and juice in a saucepan; bring to a boil.

6Lower the heat, cover the pan, and simmer for up to 15 minutes (until the quinoa is translucent and the juice has been absorbed).

7Remove from heat and let rest two minutes.
