  • 3/4 cup extra virgin olive oil
  • 1 to 2 tablespoons water
  • Juice of 1/2 lemon, or to taste
  • Sea salt and freshly ground black pepper

    In a blender or food processor, whip the yolks until pale.

    slowly drizzle in the olive oil in a very slow stream.

    until the mayonnaise begins to emulsify.

    add a few drops of water to loosen the texture, up to 2 tablespoons if necessary.
