- 2 (8-inch) pastry crusts
- 4 c. sliced fresh peaches (about 7 medium-sized peaches)
- 1 tsp. lemon juice
- 2/3 c. sugar
- 3 Tbsp. flour
- 1/4 tsp. cinnamon
- 1 Tbsp. butter
Directions

1Heat oven to 425°.

2Prepare pastry.

3Mix peaches and lemon juice.

4Stir together sugar, flour and cinnamon; mix with peaches. Pour into pastry-lined pie pan; dot with butter.

5Cover with top crust which has slits cut in it; seal and flute around edges. Cover edge with 2 to 3-inch strip of aluminum foil to prevent excessive browning; remove foil the last 15 minutes of baking. Bake pie for 35 to 45 minutes.
