Fresh Pineapple "Sundaes"

  • 1 fresh ripe Dole pineapple
  • 1 c. low-fat milk
  • 1/4 c. instant vanilla pudding mix
  • 6 Tbsp. chopped nuts
  • 3 Tbsp. shredded coconut

    Twist crown from pineapple.

    Cut pineapple lengthwise into quarters.

    Cut fruit from shell and core.

    Cut pineapple into chunks.

    Divide into 8 serving glasses.

    Place milk and pudding mix into blender.

    Process for 40 seconds or until well blended. Transfer to a large bowl.
