- 1/2 lb. fresh hot red chilies, stemmed, seeded and chopped
- 1/4 c. olive oil
- 2 Tbsp. coarsely chopped garlic
- 2 tsp. salt
- 1 c. boiling water
- 1/2 c. coarsely chopped onions
- 2 tsp. oregano
Directions

1Combine the chilies and boiling water in a bowl; let them steep for about 10 minutes.

2Transfer the mixture to an electric blender; blend on high speed for 30 seconds.

3Scrape out the jar with a rubber spatula.

4Add onions, oil, garlic, oregano and salt. Blend again until the red chili sauce is a smooth puree.

5Taste for seasoning.

6This can be used for dipping fresh cooked shrimp or over a broiled or baked fish.
