Fresh Rhubarb Pie

Ingredients
- 1 1/4 c. sugar
- 1/3 c. flour
- dash of salt
- 1 (9-inch) pie shell
- 2 Tbsp. butter or oleo
- vanilla ice cream (optional)
- 4 c. rhubarb
- 1 top crust
Directions

1Cut rhubarb into 1-inch pieces.

2In mixing bowl, combine sugar, flour and salt.

3Stir in rhubarb.

4Toss gently to coat fruit.

5Let set 15 minutes.

6Pour into pie dish lined with pastry. Dot with butter or oleo; slit top crust.

7Place over mixture; flute and trim edges.

8Bake at 375° for 25 minutes.

9Remove foil from around the edge of pie and continue baking for 25 more minutes or until golden brown.

10Serve warm or cool on rack before serving.

11Top each serving with vanilla ice cream if desired.
