Fresh Root Veggie Hash

  • 1/2 large onion (or 1-2 leeks)
  • 1/2 lb fresh potatoes
  • 1/2 lb fresh root veggies (could be any combination of turnips, celeriac, sunchokes, parsnips, carrots, beets, radish in small quantities)
  • salt and pepper to taste
  • olive oil

Directions

    Run onion and all root veggies through the food processor with grater attachment. Drizzle olive oil in the bottom of a large frying pan. Add grated veggies and salt and pepper. Cook on medium heat until brown and then flip. Cook until brown and then serve.
