Ingredients

  • 4 c. ripe tomatoes, peeled, seeded and chopped
  • 5 jalapeno hot peppers, seeded and chopped
  • 2 medium onions, chopped
  • 2 c. green peppers, seeded and chopped
  • 1 tsp. garlic, chopped
  • 1 small can (8 oz.) Hunt's tomato sauce
  • pinch of salt, to taste
  • 2 Tbsp. parsley, cilantro or coriander
  • 1 c. white wine or cider vinegar

Directions

    Mix all ingredients and let set in refrigerator.

    (Note: If you process the ingredients, omit parsley).

    Bring the salsa to a boil and simmer about 20 minutes.

    Pour into hot jars, adjust caps; process 30 minutes.

    Makes about 6 half pints.
